Garlicky saffron white bean dip


The taste of browned beans is a thing! Like a really yummy thing. You've got charred meat, you've got toasted bread, and in that protein-carb middle ground, you have browned beans. Not sexy sounding, but delicious all the same.

This dip is made from pan-roasted white beans, minced garlic, and hot Italian pepper. It's accented with saffron (because it's my birthday and I like you), capers and Meyer lemon zest. It tastes unlike any bean dip you've had before -- almost like a whipped Spanish/Italian falafel, which again sounds really weird until you think about it.
